"Junk Food" with a twist
When it comes to nutrition bars and snacks the choices are nearly limitless. Even with all the variety and flavors out there, sometimes it's more fun to make them yourself.
I decided to put a twist on the classic rice crispy treat.
For this variation, I substituted raw peanuts for the rice crispy cereal. I was looking for a readily available ingredient that was inexpensive, high in protein and low in carbs.
To make this you will need:
2 10 oz packages of Dandies vegan marshmallows
4 tablespoons of non-dairy margarine (I used Eath Balance)
4 tablespoons of coconut oil
9 cups raw peanuts, finely ground
1 cup quick oats

To make this you will need:
2 10 oz packages of Dandies vegan marshmallows

1 cup quick oats
- In a large pot over low heat, melt the margarine and oil adding the marshmallows until combined and marshmallows are melted.
- Pour in the ground peanuts and oats a bit at a time and mix thoroughly.
- Place mixture into a 9x13 pan, packing the mix until firm.
- Place pan in the refrigerator until chilled.
- Optionally you can drizzle melted chocolate for more variety.
